Ingredients

1 whole Red Roman (or firm white fish of your choice), cleaned and butterflied or left whole and gutted
2 tbsp Uncle Josie’s Chilli & Garlic Paste
1 fresh chili, finely chopped (optional, for extra heat)
2 tbsp olive oil
1 lemon, juiced
Salt, to taste

Method

Preheat the oven: Heat to 200°C.

Prepare the fish:
If whole, score the skin lightly on both sides.
If butterflied, lay the fish open flat on a baking tray.

Season generously: Rub with Chilli & Garlic Paste (find this at our Woodstock Deli), olive oil, chopped chili, and a good pinch of salt.

Bake: Roast for 20–25 minutes.

Finish with lemon: Remove the fish, squeeze over fresh lemon juice, and return to the oven (reduced to 180°C) for 10 minutes until golden and cooked through.

Serve: Pair with a crisp green salad, garlic bread, or your favourite Heritage Day sides.
