Ingredients
Fresh Fish4Africa Salmon Fillets
Pomegranate Cordial
Fresh oranges (juice + slices)
2–3 cloves garlic, crushed
Fresh rosemary and thyme
Salt & pepper to taste
Spring onions, finely chopped (for garnish)
Fresh pomegranate arils (for garnish)
Method
Prepare the Marinade
Drizzle a splash of pomegranate cordial over the salmon and squeeze fresh orange juice on top. The natural sweetness helps caramelise the edges beautifully.
Layer the Baking Dish
Place the salmon into an ovenproof dish. Add sprigs of rosemary and thyme around the fillets for aroma.
Season
Sprinkle with salt, pepper, and freshly crushed garlic.
Bake
Place into a preheated oven at 180°C for 15–20 minutes, depending on the thickness of your fillets. (You want it to flake easily but still stay juicy.)
Finish & Garnish
Top with a zesty “salsa” of pomegranate arils + spring onions and add fresh orange slices on top.
