Garlic Butter Prawns with Lemon and Parsley

This recipe is quick to prepare but feels luxurious and full of flavour. Serve it as a starter or as a part of your main spread this Christmas.

Ingredients

  • 16 large  prawns (shelled and deveined, tails on)
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, finely minced
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, finely chopped
  • Sea salt and freshly ground black pepper

Method

  • Pat the prawns dry with a paper towel to ensure even cooking. Season lightly with salt and pepper.
  • Heat a large frying pan over medium-high heat. Add the olive oil and 2 tablespoons of butter.
  • Once the butter has melted and starts to sizzle, add the minced garlic and chilli flakes (if using). Cook for about 30 seconds until fragrant.
  • Add the prawns in a single layer and cook for about 2 minutes per side, until they turn pink and slightly golden.
  • Squeeze in the lemon juice and add the zest, stirring to coat the prawns evenly.
  • Toss in the fresh parsley and the final tablespoon of butter to create a silky  sauce.

Make It Your Own

Serve these prawns on a bed of creamy mashed avocado or a lightly dressed rocket salad. Pair with toasted ciabatta to soak up the garlic butter sauce.
