PRAWNSAPPETISER
This recipe is quick to prepare but feels luxurious and full of flavour. Serve it as a starter or as a part of your main spread this Christmas.
Ingredients
- 16 large prawns (shelled and deveined, tails on)
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cloves garlic, finely minced
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, finely chopped
- Sea salt and freshly ground black pepper
Method
- Pat the prawns dry with a paper towel to ensure even cooking. Season lightly with salt and pepper.
- Heat a large frying pan over medium-high heat. Add the olive oil and 2 tablespoons of butter.
- Once the butter has melted and starts to sizzle, add the minced garlic and chilli flakes (if using). Cook for about 30 seconds until fragrant.
- Add the prawns in a single layer and cook for about 2 minutes per side, until they turn pink and slightly golden.
- Squeeze in the lemon juice and add the zest, stirring to coat the prawns evenly.
- Toss in the fresh parsley and the final tablespoon of butter to create a silky sauce.
Serve these prawns on a bed of creamy mashed avocado or a lightly dressed rocket salad. Pair with toasted ciabatta to soak up the garlic butter sauce.
