Want a meal that’s effortless, healthy, and full of colour? This Hawaiian Tuna Loin Poke Bowl delivers tender, flavour-packed tuna with fresh avocado, cucumber, and edamame. Perfect for light lunches, quick dinners, or summer gatherings.

Ingredients
Fresh tuna loin, diced
Cooked rice (white, brown, or sushi rice)
Avocado, diced
Cucumber, sliced
Mango, diced
Spring onions
Sesame seeds
Dressing / Marinade:
Soy sauce
Sesame oil
Lime juice
*Optional: a touch of chilli or sriracha
Method
Prepare the tuna
Dice tuna into cubes and toss with soy, sesame oil, lime juice, and optional chilli. Let it sit for 5–10 minutes to absorb the flavours.
Prepare the base and toppings
Cook rice and let it cool slightly. Dice avocado and cucumber, mango, and slice spring onions.
Assemble the bowl:
Layer the marinated tuna, avocado, cucumber, edamame, and spring onions over the rice, letting the colours shine. Sprinkle a generous scattering of sesame seeds on top for texture and visual appeal.
Finish & serve:
For an extra pop of flavour, drizzle over some of the remaining marinade or a light touch of spicy mayo. Serve immediately to enjoy the fresh, vibrant flavours at their best.
For the best flavour and texture, make sure your tuna is ice-cold before dicing. If you have time, chill your bowl before assembling — it keeps everything fresh and makes the colours and flavours pop even more.
